Quinoa, Sausage, and Worldly Spices

A simple yet tasty snack that’s perfect for the evenings I spend working on projects in the peaceful solitude of my apartment.  A combination of ingredients from Bi-Rite Market and spices I’ve brought back from trips around Africa and the Middle East, its delectable flavors make this small plate as satisfying as an entire meal.  And following the delightful dish is a scoop (or three) of Bi-Rite’s utterly divine Ginger ice cream.

Who says long nights of work can’t be delicious?

 

Ingredients:

Quinoa
Merguez sausage
Rainbow chard
Garlic
Onion
Cilantro
Dill
Green onion

Omani spice blend (curry, cardamom, etc)
Paprika
Turmeric
Cumin
Saffron
Olive oil
Balsamic vinegar
Salt
Pepper
